It feels like summer in Dallas already so we knew it was time to starting creating some fun summer recipes for all of you. When it's hot outside the last thing you want to do is turn on the stove or oven. We'll be featuring some quick and easy snack and meal ideas to keep you healthy and cool all summer long. Give these popsicles a try and leave a comment letting us know what you think.
- 1 bottle of Mother Beverage Strawberry Vanilla Flavor
- 2 fresh lemons
- 4 fresh strawberries
- 3-5 TBS of honey, maple syrup, or agave
- Stevia, or other favorite sweetener
Directions: Pour Strawberry Vanilla in bowl. Squeeze in 1 to 1.5 lemons. Add honey, starting with 3 TBS. If you want it sweeter, please add more. We found 3 to 4 to be a good amount. A good tip is to make sure it tastes a little sweeter than normal as the sweetness will diminish once it's frozen. In separate bowl, or food processor, cut up strawberries, add 1 packet of stevia, and squeeze the last 1/2 of lemon. Using a fork, imerssion blender, avocado masher, or food processor mash up the strawberries to your liking. We love it with a little bit of texture. Add spoonful of strawberries to bottom of popsicle molds and add the Strawberry vanilla mixture until full. Repeat for remaining popsicle molds. Freeze until hard. If you don't have a popsicle mold you can easily use dixie cups and a straw or popsicle stick for the handle. These have been kid tested and approved. Feel free to make this recipe your own using whatever sugars or sweetners your family likes. Enjoy in the warm sun, preferably on a hammock or poolside!
